You are correct, it is not aged in casks. At the time, Dan was very tight-lipped about what he did with his rums, and even went so far as to not correct me when I sent him a preview of the review!

Since then I have had the pleasure of meeting Dan and been exposed to many of the dark secrets of his art.

I suppose I should correct the review, now that my facts are plainly not facts.

Dood

Matt, thanks for the review. My dear Sue Sea and I had the opportunity to try the Cherrywood, as well as five others from Daniel at Robert's recent Guatamalan tasting in Miami.

Your review stated "The Cherrywood rum has, as one would expect, a rich, woody flavor to it - owed to the aging process in charred oak casks".

Now please, please correct me if I'm wrong (we did have 16 rums that night, lol) but I'm almost certain that Daniel explained that his rum is NOT aged in barrels but in stainless casks. The wood, eg. Lemonwood, Cherrywood, Cane, Hickory, etc. is then inserted into the stainless containers along with the rum.

Best regards,
Capn Jimbo
