		<description>At The Rum Project (link above),  my Sue Sea and I have now tasted and reviewed over 120 rums (we&#039;ve literally lost count) - still, Appleton Estate 12yr remains one of the world&#039;s top rums.

AE 12 is also our chosen rum to represent the Jamaican style of rum (there are four or five styles), based on the use of dunder pits for a greatly increased number of esters (flavors).   Dunder also adds a recognizeable aroma to Jamaican style rums, dead giveaway every time.

The great thing about Appleton Extra is the balance of flavours which is the true virtue of master distilling and blending. Has anyone tried this in the cocktail &#039;The Blazer&#039;  Take a double measure of Appleton Extra into a brandy balloon add a few blackberries and raspberries and place glass longways across a vessel of boiling water. Leave the glass for 5 mins turning occaisonally - then carefully ignite the vapours that have amassed in the glass. The &#039;whoosh&#039; of fire melds the flavours of the rum and the berry juices resulting in a beautiful drink.</description>
